Stone-Baked Pizza - Flames visible or smoke smell coming from oven.
Issue
- Flames inside oven
- Smoke coming from oven
- Smoke smell
Applies to
- Stone-Baked Pizza Oven
Solution
Oven Smoking Issues
- Use semolina as an alternative to cornmeal as it has a lower smoke point. Note: contains gluten.
- Wipe off the excess cornmeal on the Pizza Peel before inserting the pizza into the oven to keep the oven cleaner and reduce smoking.

Visible Flames Issues
- Excess cornmeal and/or flour can ignite at high temperatures, which is normal during cooking. When that happens, KEEP THE OVEN DOOR CLOSED; the flames will extinguish themselves.
- Check to see if other ingredients (such as cheese or sauce) have spilled onto the pizza stone. When that happens, KEEP THE OVEN DOOR CLOSED; the flames will extinguish themselves. For more information, please refer to the Stone-Baked Pizza - Stone Guide.
