Solution

Oven Smoking Issues

  • Use semolina as an alternative to cornmeal as it has a lower smoke point. Note: contains gluten.
  • Wipe off the excess cornmeal on the Pizza Peel before inserting the pizza into the oven to keep the oven cleaner and reduce smoking.

Visible Flames Issues

  • Excess cornmeal and/or flour can ignite at high temperatures, which is normal during cooking. When that happens, KEEP THE OVEN DOOR CLOSED; the flames will extinguish themselves.
